Depends whether you let reading "Win" and "Lose" on Clay's record mess with your perception of him.
I think Clay is one of the best LWs in the UFC, certainly top 5 IMO and I think he would beat Joe.
Clay has better wrestling and striking IMO.

Joe would beat him pretty badly, Clay Guida is exciting but he is not a contender to the title. He is one dimensional, doesn't finish fights, and is too wild on the feet. I love the guy and I think he deserves where he is in the UFC but Joe is better then him and would beat him.
For the poster above, you are right that Clay is better then his record shows but top 5? the way I see it he is waaaaay behind Penn, Sherk, Edgar, Joe Daddy, Franca, Florian, and Din, and he would get beat by all of them. There are also guys like Huerta, Diaz, Griffen, Danzig, and Pelligrino who could beat him (and 2 of them already have) For him to get top 5 honors he has to beat some better guys (a winning record in the UFC helps) and to get a much better standup game.

I like Guida, but hes just a scrapper.. only reason the Griffin fight was so close is because Griffin is extremely sloppy and its easy to capitalize on his mistakes.. but if you look at his other fights.. Din beat him, Huerta beat him.. he lost to Griffin I mean, hes not winning any fights outside of the Aurelio fight and the only reason his name is brought up is because of how exciting his fights are.. hes fun to watch but.. Joe would serve him.

yeah he's only 2-3 in his 5 fights in the ufc but all of his 3 losses were really, really close fights...
i think he could be a really good fighter if he could add another dimension to his game...but doing so is easier said than done lol

Before Joe ever fought Kurt I would have gone with Joe 100%...
but I think clay's aggressive takedowns would earn him a decision victory...
The catch would be avoiding the guillotine that joe is no doubt going to pursue over and over again... I don't question Joe's ability or heart, I just could see Clay winning this fight through sheer determination and keeping Joe pinned and frustrated.
I also don't see Joe being able to set up his ground work with his stand up, much like he was unable to do vs Pelegrino.

^^ Those two posts pretty much sum up my opinion on Guida and his fight vs. Stevenson.
Guida is a fighter, no doubt about it.
Stevenson would sub him in the first or second.
And Guida isn't top ten in the world, and he isn't top five in the UFC.
