You guys know the north south escape where the guy on bottom does a backward roll to try and get his hooks in to take the top guy's back?
Your timing and control needs to be precise to hit this, but it is an option.

With gi you can do baseball choke.
Also, an unorthodox sumbission would be a reverse guillotine neck crank. - Very dangerous, i would never try it.
