There a bunch of fighters he should fight before he ends his career, but only a few are in the UFC right now.
I think that Hendo and (to a lesser extent) Marquardt have a decent chance at winning a rematch. And I'm sure Anderson would like to prove his dominance over Okami before he calls it quits.
Realistically, this is what I see happening and why.. Anderson has no challenge in the UFC MW division and doesn't want to step on the toes of his good friend Machida. He wants to do the boxing thing, but Dana obviously doesn't want him to. So I see him stepping away from MMA temporarily, so he can do what he wants in boxing. Then later when he is satisfied his boxing foray, you would imagine the UFC has new (better) contenders. He can come back and have new motivation.
Fights I would like to see before his career is over include the following opponents:
Lindland
Jacare
Mousasi
GSP
Shields
I could do more, but those are the top.

So yea... this list is missing one major player that some other people have brought up.
Where is Okami? The last person to beat Silva, albeit DQ, but also the last guy in the UFC who is a legit match-up problem for Silva. I mean outside of a rematch with Hendo there is really no one else left in the MW divison for Silva outside of Okami. Maybe Maia, but he really didn't look that good against MacDonald IMO, so I doubt he would look good against Silva.
So my list would be
1. Okami
2. Hendo 2
3. Wandy
4. Rampage
5. Liddell
Any of those fights would be damn entertaining.

My dream match up, no pun intended, for Anderson Silva right now is if he fought Gegard Mousasi. I honestly think that Mousasi is one of the only MW that has the skills to challenge both Silva and Franklin.

Am I the only one who wants to see him fight Marquardt again??
Jackson's camp seems be well ahead of everyone else in terms of gameplans lately, I don't know that I would bet against them.

Well if you want to look at it camp wise then there is no camp more successful than Blackhouse under the Zuffa banner. They have 4 fighters undefeated when fighting in UFC/WEC (Silva, Big Nog, Machida, Filho). They have a combined record of 16-0 while fighting under Zuffa with 3 belts... which camp even comes remotely close to that?

MW:
Lindland and Hendo
not even Mousasi can do any damage to this guy, even with his extensive boxing/kickboxing background.
Right now, Anderson's biggest comp in my opinion is Lindland.
LHW:
This will be far more competitive for him, too bad Machida won't fight him.

Forrest, Rampage and Shogun might give Silva some trouble. Other than that, no one else. Wandy's looping way of striking is awesome, and works perfect against many of his opponents, but Silva's precision will cause problems.
edit: forgot about Akiyama. That would be a great MW fight. Akiyama probably has a better chance than Okami and Hendo.

Top 5.
5. Marquardt
4. Henderson
3. Wanderlei Silva
2. Lyoto Machida
1. GSP
If these were his last 5 fights I'd be happy. I know he wouldn't want to fight Lyoto, but I think it's a great match up. The GSP fight would be huge since it would settle the question of just how good St. Pierre really is. He's been making his wins look easy, but at 185 (a weight he can easily make) he would be facing the ultimate striker. Can he deal with that? I'd like to see it.
