Ask him if he wants to fight Griffin again.. if that is still a high priority to him and such.
His predictions on Sherk/BJ and his view on the steroids thing (typical question).
Who else he would want to fight? Though, he will probably give the typical: "I am focused on him right now, I will worry about future opponents later" answer".. I am curious to see who he wants though.
Also, ask if fighting in the UFC is so easy even a Caveman can do it? (lol, I had to, I am sorry. Guida is a great fighter and great to watch. I am only kidding)

How much weight do you cut to make weight?
I know you don't want to talk bad about your employer, but can you give us an idea about how fighters in general feel like they're being treated by the UFC vs other organizations?
A lot of MMA fighters have transitioned from other martial arts disciplines. Where did you get your start, or did you start training specifically to do MMA?
what do you do to relax, rest up, and chill out when you're not working/training???

I would just ask him to do whatever it takes to avenge his loss to Roger Huerta. I'd ask him how he would approach another fight with Huerta, if he were to prepare any differently.
Clay had that fight won but Huerta was able to slip in the submission. Props to Huerta for working it in, but Clay should have had that.

since he's stated several times before that he knows he's a small 155er, if he'd consider a move to the WEC to compete at 145.

Following up on Lovebuzzkurt’s question
Ask him to detail his weight training regime, and explain how much focus he puts on muscle endurance versus muscle strength.
What career would he pursue if he couldn’t fight, besides carpentry?
How do you mentally recover from a loss in the 3rd round in a fight, when you “won” the first 2 rounds?
Has he change his training at all for the upcoming fight and if so in what ways?
How many interviews has he done in the last 3 months?
