I don't know if this is the case with Cung Le, but most fighters don't choose who they fight. They have managers and promoters who pick the fights for them. Le just fought who the promotions suggested him to fight. He only has 3 MMA fights and in all honesty, you wouldn't throw ANYONE in with top guys when they're first trying to transition into MMA. Considering the difficulty of making that switch over into MMA from any one specific martial art a certain fighter might excel at, Cung Le's discipline being San Shou, I'd say he's jumped that hurdle quite handily thus far.
